Cookbook? I was just going through my Kirsten and Felicity books when I thought about this. I LOVE Mexican food and the more authentic the better. I thought they made these, but were only available for a year or two. Anyway, if someone happens to know for sure or even have the book, just let me know. Thanks!

However, when I get back in January, I would be happy to send you a cookbook or e-mail you recipes of New Mexican food. It's a little bit different than Mexican food but tastes much, much better! I'm sure MissMooMoo will concur with me on that one.

For example:

Feast Day Salad:
2 avocados
1 largish cucumber
1 red onion
1 container Italian dressing (we use wishbone)

Peel and pit the avocados and dice them into cubes. Throw in a bowl. Wash and dice the cucumber as well (the peel is optional, some people like it, some don't). Do the same thing with the red onion. Add dressing to taste. Mix together! You can mess with the ratios as much as you'd like.

I love this salad and it's a staple of all our feast days.

It runs pretty high in price by itself, but cheaper as part of the passtimes set for some reason.
